“Processed” is a word that gets thrown around a lot, and it is not always clear what it means. Not all processing is bad. Bagged spinach is technically processed. Frozen vegetables are processed. Plain canned beans are processed. None of those are problems.

The foods that matter for blood pressure are what nutrition researchers call ultra-processed foods — products that have been industrially formulated with ingredients you would not find in a home kitchen. Added sodium, preservatives, emulsifiers, refined starches, and flavor enhancers. The kind of food that comes ready to eat or ready to heat, engineered for shelf life and taste.

Think deli meats, frozen dinners, canned soups, packaged snacks, sugary drinks, boxed meals, most breakfast cereals, and the majority of fast and chain-restaurant food. Foods that have been changed so thoroughly that the original ingredients are hard to recognize.
